- 1 head cauliflower (about 2 pounds, cut into bite-size florets)
- 1 lb. carrots (3 to 4 large, peeled and cut into 1/2-inch pieces)
- 15 oz. crushed tomatoes
- 1 cup low sodium vegetable broth
- 1 cup frozen peas
- 1 cup heavy cream (or unsweetened full-fat coconut milk)
- basmati rice (Cooked, for serving)

I really liked this! It's got a lot of heat and good, tikka masala flavor and is very filling.

Rave reviews! Filling and flavorful! A few alterations, I varied my amounts and tried to make not quite as much, went the coconut milk route, added quartered mushrooms, and a yellow potato. I also made fresh cornbread instead of rice. Do not skip the cilantro, so yummy.

Very good indeed! My wife thought potatoes would be a good addition but I liked it just as written.
