Quick, yummy tzatziki. I quartered the recipe because I didn’t need a ton, and I had to play around with the lemon juice/salt/dill ratios to get it right, but it turned out great.

This sauce was just like what you get at a Greek restaurant. It was quick and easy to make. I made half of the recipe. I shredded the cucumber and drained it by putting a coffee filter into a strainer, put the cucumber shreds in the filter, then put a small bowl on top and added weight by putting a 15 oz. can on top of the bowl. The sauce remained quite thick which stood up to the pita bread.
