- 2 Tbsp. canola oil (or peanut oil)
- 1 medium red onion (diced)
- 6 cloves garlic (minced)
- 1/2 sweet red pepper (finely diced)
- 1 celery stalks (finely diced)
- 2 Tbsp. chili powder (I used chipotle chili powder)
- 1 tsp. cayenne pepper (optional)
- 1 1/2 tsp. ground cumin
- 1 tsp. paprika
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1 tsp. ground coriander
- 1 tsp. oregano (preferably Mexican)
- 1/4 tsp. thyme
- pinches allspice
- pinches clove
- 1 tsp. arrowroot powder (cornstarch, or all purpose flour)
- 1 Tbsp. chipotle chiles in adobo (sauce, minced canned, I usually blend the whole can and keep the leftovers in the refrigerator)
- 2 Tbsp. tomato paste
- 14.5 oz. diced tomatoes (plain, or with oregano and basil)
- 10 oz. tomato sauce (cans)
- 14.5 oz. beef broth
- 16 oz. kidney beans (drained and rinsed)
- 12 oz. roast beef (cooked leftover, or more, to taste cut into 1/2 inch dice.)
- chopped fresh parsley (or cilantro.)
