Wonderfully delicious recipe. I added thinly sliced carrots and spinach. Doubled the red curry paste. Loved the addition of basmati rice.

Everyone loves it, kids, picky inlaws, people who don't like bell peppers. It doesn't thicken too much when you simmer it, but the cooked rice will sure absorb much of the broth if left to sit.

Have made this multiple times and my family loves it. I added bamboo shoots and zucchini.

I added a tsp of veg bouillon paste, switched to green curry (just a preference) and a couple pinches of red pepper flakes. I would also suggest maybe keeping the rice on the side. As it sits, the rice begins to soak up all of the broth/juice and if you’re a lover of the liquid in your soup like me, that’s a bummer! Otherwise very good soup. This was my 2nd time making it.

didn't have any vegetable broth on hand, so used chicken broth instead. this was fantastic! my husband and I loved this dish. definitely adding this to favorite recipes

Made this tonight for dinner. Forgot to add mushrooms, would be delicious. We had spicy red curry paste and the entire dish was delicious. We didn't add cilantro as we don't like it. Would have added fresh basil but didn't have any. All in all a very easy meal...and we had fresh shrimp right out of the Salish Sea (our backdoor) which made it even better!

Great - I added chili paste and jalapeño for a kick. Also added mushroom and scallions.

Amazing, I didn’t add noodles or rice and I thickened it a bit with almond flour. But it was absolutely perfect!

We loved this recipe. I used half the curry paste. My husband has been very ill and didn’t want it too spicy. He said it was one of the best recipes I have ever made. I would make it again!

delicious, easy to make, i add green curry paste instead red and its so hot!, but i like hot, also i used corriander seed and parsley instead corriander leaves, i dont get in my market)

Contrary to other reviews, I found this only okay. It was definitely missing some flavour & spice, so I added 2 Tbsp of fish sauce which helped. You can also easily substitute rice noodles instead of the rice. I think I’ll stick with the other Thai soup recipe I have.

I added about a fourth of a cup of sugar (maybe a tad less) and added a little more paste. We will be having it again.

I loved this recipe; however it does longer than 10 min. to prep and I'm sure it's just me looking for the ingredients and hoping I have everything. Very simple to make. I made 1/2 the recipe and is fine for two with leftover soup to add additional shrimp for a quick lunch. I also used jasmine rice which was very nice.

I made a sustitution that worked fine . instead of rice grain I used fine rice noodles !
