- 1/3 green bell pepper (chopped in medium size cubes)
- 1/3 red bell pepper (chopped in medium size cubes)
- 1/3 zucchini (chopped)
- 1 handful broccoli florets
- 7 corns (baby, chopped)
- 7 baby bella mushrooms (chopped)
- curry
- 1 Tbsp. sesame oil
- 4 oz. red curry paste (This is my FAVORITE BRAND to use)
- 1 can lite coconut milk
- 1 can full fat coconut milk
- 3 Tbsp. peanut butter
- 3 Tbsp. lime juice
- 2 1/2 Tbsp. soy sauce
- 3 Tbsp. sugar
- 2 tsp. garlic paste
- thai basil leaves (Fresh, optional)
- salt (to taste)
- tofu (or your choice of protein like chicken or beef)
