- 1 pinch cayenne pepper (or to taste)
- 14 oz. full fat coconut milk
- 14 oz. diced tomatoes
- 2 1/2 lb. sweet potatoes (peeled and cut into 1/2-inch pieces)
- 1 1/2 cups frozen peas (thawed)
- salt (to taste, I used about 1 1/2 teaspoons)
- black pepper (to taste, I used about 1/2 teaspoon)
- basmati rice (Cooked)
- roasted peanuts (or cashews)
- fresh cilantro
- scallions
