Turned out great. I think next time i might sprinkle a little garlic salt on the Zucchini before adding the beef mixture, it seemed like it could have used a little more seasoning. Also, i didn't have enough mozzarella cheese on hand so i mixed what I had left with Monterey jack and it was good. I also cooked it 5 mins longer than what the recipe called for and it was perfect. My husband loved it! 😍

I was pleasantly suprised by how good this recipe is! I upped the Italian seasoning to 2 full generous tsp and added all of the marinara to the meat sauce - not reserving any for later. I also added probably double the mozzarella on top of the boats. Really good. I think I cooked my first round for 22 mins and they were perfect. Tonight’s zucchini are a little smaller so I’m aiming for 20 mins. Oh don’t forget salt! I sprinkled a tiny bit onto the zucchini this time prior to filling them just to see what that does for me.

We loved this recipe. I have made these before using shredded cheddar but using mozzarella shredded is the way to go. 100% delicious
