This easy stuffed bell peppers recipe is brimming with the big, bold flavors of wild rice, hot Italian sausage, tomatoes, onions, garlic, and red wine!

- 2 Tbsp. olive oil (divided)
- 1 yellow onion (diced small)
- 1 clove garlic (minced)
- 1 tsp. dried oregano
- 8 oz. spicy Italian sausage
- 1/2 cup red wine (divided, like Cabernet Sauvignon)
- 1 can crushed tomatoes (14 ounce per can)
- 4 bell peppers (any color, halved through the stem. Remove the seeds and ribs with a sharp knife, then season all over with olive oil, salt, and pepper)
- 1 pkg. cooked long grain white rice (8 ounce per package, such as jasmine rice; can also use 2 cups of leftover or frozen rice of your choice)
- 1 cup California Grown wild rice (cooked)
- 1 cup shredded mozzarella (divided)
- 2 Tbsp. parsley (divided)
- salt (to taste)
- pepper (to taste)
