- 1 lb. dry pasta (box of small, such as elbow macaroni, penne, gemelli, or shells)
- 4 Tbsp. unsalted butter (1/2 stick)
- 1/3 cup all purpose flour
- 4 cups whole milk (plus more, if needed)
- 2 tsp. kosher salt
- 1/2 tsp. ground black pepper
- 1/4 tsp. cayenne pepper
- 1 tsp. smoked paprika
- 1 tsp. mustard powder (you can also substitute yellow mustard)
- 1 lb. extra sharp cheddar cheese (grated, or use an equivalent mix of cheeses, 16 ounces)
- 1 cup freshly grated Parmesan
- 1/2 cup chopped bacon (crisped)
- 1/2 cup onions (caramelized)
- 1/2 cup crumbled goat cheese
- 1 cup butternut squash (roasted diced, 1/2-inch dice)
- 1/4 cup chives (minced)
