- 8 oz. chorizo sausage (smoked, cut crosswise into ¼-inch discs.)
- 1 1/2 boneless skinless chicken breasts (about 1½ pounds sliced crosswise into 2-inch wide strips. or 6 chicken thighs with bones, skin removed.)
- kosher salt
- ground pepper (Fresh)
- 1 yellow onion (medium, chopped, about 1½ cups)
- 2 cloves garlic (minced, about 1 tablespoon)
- 1 tsp. fresh rosemary (finely-chopped)
- 1 pinch saffron
- 1 tsp. spanish paprika (smoked)
- 1 cup diced tomatoes (canned)
- 2 cups rice (aborio, rinsed of excess starch)
- 3 cups low salt chicken broth (I like Swanson's)
- 14 medium shrimp (peeled and deveined)
- 2 roasted red peppers (from a jar, sliced into strips or sliced pimientos from a jar.)
- 2 Tbsp. chopped parsley (optional garnish)

Flavors were definitely there. Household loved it. The only problem was my own fault. i undercooked the rice a little bit. I will definitely be making this again and doing it right.
