The first time I tried this recipe, I only had red onions on hand. The results were very spicy. I still however enjoyed the gazpacho, especially when I added some thawed cooked jumbo shrimp for some protein. This time, along with shrimp, I used a shallot, and the “zip” it added was just right. I like the texture that using bread gives the gazpacho. Definitely a go-to recipe when it’s too hot to eat a big meal!
