- 3 sweet potatoes (large, peeled and cut into 1/2-inch cubes)
- 1 sweet onion (large, diced)
- 3 cups diced tomatoes (you can use canned or fresh. If you use canned, use the liquid, too)
- 3 Tbsp. tomato paste
- 2 cloves garlic (finely chopped)
- 3 cups water (1 1/2 if you use canned tomatoes)
- 2 tsp. cumin
- 1 tsp. chili flakes
- 1/4 cup molasses (optional but adds a nice depth of flavor)
- 1 1/2 cups quinoa
- 2 cups water (additional)
- 1 1/2 cups black beans (cooked)
- 1 apple (1/2-inch dice)
- 1/2 cup almond butter (see recipe here: Almond Butter)
- 3/4 tsp. salt (and pepper, or to taste)
