Got some refrigerated tortellini? This healthy and delicious one-pan recipe will be ready in minutes. It’s loaded with fresh veggies, and the rich, Italian-inspired flavors will make it a family favorite. The recipe, which makes 8 cups, is a Yummly original created by The Electrified Cooks.

- 1 broccoli crown (about 8 oz.)
- 1/2 red bell pepper
- 1 1/2 cups grape tomatoes
- 3 cloves garlic
- 3 Tbsp. extra-virgin olive oil
- 1 tsp. salt
- 1/2 tsp. black pepper
- 2 pkg. refrigerated cheese tortellini (9 oz. per pkg.)
- 2 cups vegetable broth (preferably unsalted)
- 2 Tbsp. fresh lemon juice
- 2 tsp. Italian seasoning
- 2 cups baby spinach
- 1/2 cup fresh basil leaves
- 1/2 cup grated Parmesan cheese (divided)
- 1/2 cup half-and-half

Directions
- Cut broccoli into bite-size florets. (Save the stem for another use.) Cut red pepper into 1/2-inch pieces. Halve grape tomatoes and mince garlic.
- Heat olive oil a 12-inch nonstick frying pan over medium-high heat. Add broccoli and red pepper. Season with salt and pepper. Cook, stirring often, until broccoli is bright green, about 3 minutes.
- Add tortellini and stir to lightly coat it with the olive oil. Cook, stirring frequently, until edges of tortellini begin to lightly brown, about 2 minutes.
