Directions
- In case the pork chops have any excess moisture, use a paper towel to pat them dry. Place the pork chops in large glass dish.
- In a small bowl, mix the salt, black pepper, cumin, onion and garlic powders, and the Mexican oregano. Gently crumble the oregano with your fingers before adding it to the bowl.
- Add the lime juice to the bowl and stir well. Pour this mixture over the pork chops and make sure it covers them all over. Set these aside while you heat the grill or grilling pan.
- Heat the vegetable oil in a large stove-top grilling pan at medium-high heat. This will take about 1-2 minutes. Once it is hot, place the pork chops in the pan and cook for 6 minutes. After this time, flip the pork chops and continue cooking them. Cook the pork chops for 4 minutes if you like your meat with a little bit of pink, or 6 minutes if you like the meat well cooked. Once cooked (to an internal temperature of 145ºF), serve the pork chops immediately, otherwise they will continue to cook with the heat from the pan.
