- olive oil
- 1 lb. ground turkey
- 1 yellow onion (large, chopped)
- 5 large carrots (chopped)
- 8 cloves garlic (fresh, minced)
- 1 head green cabbage (washed, quartered, cored and chopped)
- 8 cups chicken broth (or water, add more if desired)
- 14 oz. salt (added diced tomatoes)
- 1/2 cup brown rice (medley, I used the kind from TJ's, but any rice will work great, rinsed)
- 2 tsp. paprika
- 1 tsp. crushed red pepper
- 1/2 tsp. dried thyme
- 1/2 tsp. dried parsley
- 2 bay leaves
- 1 tsp. sugar
- 1 Tbsp. worcestershire sauce
- 1 Tbsp. white vinegar
- salt
- pepper
- fresh parsley (for garnish, optional)
- sour cream (optional)

An amazing soup! So full,of flavor. I’ll be making this often as it’s sooo easy!

This was AWESOME! I only made a couple changes; I used some chopped potatoes instead of rice and I didn't have any bay leaves, so I used a little dry basil. Light yet filling and a TON of leftovers. Will defs be making this one again
