This was a really nice take on roasted vegetables. I did not have potatoes and shallots, so I used bell peppers and red onions. Tasted wonderful. I probably should have left them in a bit longer for some more crispiness but yummy nonetheless. Also did not have balsamic syrup so used 1 tablespoon for balsamic vinegar. Didn’t feel like I was losing anything, but need to find out if there is balsamic syrup to try this again and see if there is a difference. I’ll definitely make again
