Description

- 1 red bell pepper
- 1 red onion
- 1 sweet potatoes (medium)
- 2 Tbsp. extra-virgin olive oil
- 1 tsp. garlic powder
- 1/2 tsp. salt

Directions
- Preheat the oven to 425°F.
- Line a baking sheet with parchment paper.
- Cut the bell peppers and red onion into 1/2 inch squares. Separate the onion layers for even cooking.

This was so quick and easy to make, and it turned out great! The only change I made was to double the recipe; this is definitely worth making again.

Mix the oil and seasonings first so you can put the veggies in the bowl as soon as you cut them.

Used squash, zucchini, red and yellow bell peppers, and eggplant. Came out great!

Really good on the side with salmon! Hubby and child are picky eaters, and they liked it! I would recommend NM Green Chile or chili flakes mixed in for a little flavorful kick.

These were a definite hit for dinner time! i e cooked roasted viggies before, but the added sweet potato made it so much better!

It was pretty good! I hadn't tried sweet potatoes before but they were super tasty. The recipe has room for more spices.

was a little overcooked so i recommend watching it between 20-30min to see if its done earlier. It was still so yummy though!

This was a hit! Some of my family members don’t like sweet potatoes but with this mixture they loved it. Most definitely will be making again!
