Now my favorite pot roast recipe. I was surprised how much liquid was produced by the beef and veggies. Very tender and tasty. It’s a keeper!

I made this in a crockpot (since I don't have a Dutch oven), and it turned out beautifully! I added the optional 1/2 cup or beef broth and 1/2 cup of red wine because I was weirded out by the lack of liquid. Maybe one day I'll follow the recipe exactly, but my family and I are loving this version for now! I'm so glad I found this!

This was the best pot roast ever! I used to use a slow cooker but this was ever so much better I'll make it again and again! Thank you!!!!
