- 16 Tbsp. unsalted butter (at room temperature)
- 3/4 cup granulated sugar
- 1/4 tsp. kosher salt
- 4 eggs (200 g, weighed out of shell at room temperature, beaten)
- 2 cups all purpose gluten free flour (I like Better Batter here)
- 1 tsp. xanthan gum (omit if your blend already contains it)
- 1/2 cup jam (seedless, heated slightly to make it spreadable)
- 1 1/2 cups sugar (confectioners’)
- 1 tsp. meringue powder
- 4 Tbsp. milk (any kind)
