  • 13 1/4 ounces penne (Dreamfields, or use any short, tubular pasta of your choice)
  • salt (for pasta cooking water)
  • 2 zucchinis (medium, 8-10 inches long cut into half-moon shapes)
  • 1 tablespoon minced fresh garlic
  • 1 tablespoon olive oil
  • salt
  • fresh ground black pepper
  • 2/3 cup basil pesto (with Lemon, or use any basil pesto of your choice; use more or less pesto to taste)
  • 1/2 cup pasta cooking water

    This dish was easy and tasty. I added sun dried tomatoes. The family really enjoyed it.

    Tasty and easy. I had kale pesto in the fridge, so used that instead.

    It turned out good but not as green as the picture and more watery than I thought it would turn out. I also added dry parsley flakes to mine.

    I loved it , Kroger‘s did not have the basil so I had to improvise and use basil paste still turned out pretty good. I used parmesan cheese in a shaker instead of grating it and I think it made it kind of salty or it could’ve been the salty taste from the basil paste but other than that it’s still turn out OK! Next time it will be better when I can go to Publix and They have the ingredients I need

    Quick and easy...added garlic, fennel and fresh basil to the mix. It was fabulous!

    Pretty good! I almost prefer the potatoes on their own as a side dish. They held the bulk of the flavor but got a little lost in the pasta. I think I'll make again but add a bit more spices and vinegar.

    I used butter instead of olive oil.... which of course made it extra tasty, and added a little scoop of fresh basil with my greens. Totally delicious but not really good as leftovers.

    Turned out good and easy to make but REALLY starchy even with tons of Argula. I'll probably make the potatoes as a side dish but not a meal. It also dried out when refrigerated and was not good the next day.

    Great! The sweet potatoes with balsamic created an unexpected taste. I would make it again with chicken possibly next time, but it is great as is!

    This was delicious! I made it with whole wheat pasta and it was great. Will definitely make again, though I'd probably add more sweet potato and balsamic (and cheese of course!)

    Good! I used whole wheat pasta that may have overpowered the balsamic flavor. A little garlic might be good next time

    I used spinach and did away with the cheese.I also used brown rice pasta to cut the carb count a bit. I added shredded chicken and it was amazing!
