- 3 lb. beef ribs (meaty, grass-fed)
- liquid smoke (optional)
- 4 Tbsp. olive oil
- 1 Tbsp. garlic powder
- 1 Tbsp. onion powder
- 1 Tbsp. Cajun seasoning
- 2 Tbsp. dark brown sugar (packed)
- 1 tsp. chili powder
- 1 tsp. salt (can use smoked salt as well., I used 1 ½ teaspoons because we kinda like our ribs a tad salty)
- 1 tsp. paprika
- 2 tsp. oregano
- bbq sauce (Favorite, I only used a few tablespoons of Sweet Baby Ray's)

Went standard with a poultry seasoning instead of the paprika. I used Organics brand Carolina BBQ sauce. it came out fantastic.

Tasty and juicy. I added my onion powder to the sauce because I didn’t have any at the time. NOTE: the rub/seasoning is more than enough for 3lbs., which was 4 very thick individual ribs for me. I marinated from 6:30PM to 11:30AM the next day. I baked for 3.41 hrs, and they turned out fine. It might be better for 3.2 or 3.0 (if you want it a little medium rare). I should have gotten ribs all of the same thickness for even cooking and less fat content, but it turned out yummy still.
