- 1 Tbsp. brown sugar
- 1 medium onion (diced)
- 2 cups chicken broth
- 2 sweet potatoes (medium, peeled and cubed)
- 2 Tbsp. lemon juice
- 1/2 cup fresh cilantro (chopped)
- 1 cup couscous
- salt
- pepper
- 1 pinch saffron (*this is optional, but it adds a gorgeous color to the stew)
