Hearty and healthy soup! I used low sodium stock. For beans, used red kidney and garbanzo. I don’t recommend adding the noodles as they turn mushy. Cook them and store separate to add just before eating. You really don’t even need them. This soup was delicious. I will make it again. Very easy to prepare.

Used unsalted chicken stock because that’s what I had instead of vegetable stock and added more pasta then what it called for. Also omitted the green beans but threw in some arugula at the end for some greens. Didnt use diced tomatoes either but a large can of peeled San marzano tomatoes which I’m sure was just as good. Flavor was good, Parmesan added a nice richness. Adding some bacon would be yummy next time.

Liked this recipe. Easy to make. made them exactly as the recipe called for and kids love them. Will definitely be making these again.
