  • 1 1/4 cups lentils (I used a mix of green, red split and black lentils, but green only work great.)
  • 12 ounces potatoes (cut into bite sized pieces)
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon thyme
  • 1/2 teaspoon oregano

    Everyone ate and enjoyed it, but I'm not dying to try it again. It was super easy and used ingredients which I always have around. I did add 1/2 bouillon to the water amount

    Super yum and quick. Needen more salt and it turned out more of a stew that a soup but I still really enjoyed it.

    This is a quick, healthy meal. Thyme is definitely needed!

    Well, I made this soup and I actually over cooked it unfortunately so that it turned out like mush! Our stove and pans get way too hot, so I have to reduce the cooking time a lot. It still tastes okay with the spices and potatoes. I might try it again sometime, but I have a feeling it wouldn’t be my favorite, even cooked properly. If you make this, I would make sure to check on it often so the lentil don’t get mushy!
