Description
Lamb chops have a mystique that they’re only for special occasions. In fact, they’re quick and easy to prepare. Single rib chops with the meat trimmed (frenched) from the bones — often referred to as lamb lollipops — come out super tender and juicy. Our recipe adds a 40-minute marinade with some olive oil, garlic, lemon, oregano, and Dijon mustard, plenty of time for you to throw together a salad or prep a vegetable to complete the meal. If you have a splatter guard, it will help keep the stovetop clean as you sear the chops. The recipe is a Yummly original created by David Bonom.
Ingredients
- 5 Tbsp. extra-virgin olive oil (divided)
- 4 tsp. fresh oregano (finely chopped, or 1 1/2 tsp. dried oregano; plus fresh oregano sprigs for serving, if you like)
- 2 tsp. lemon zest
- 1 Tbsp. freshly squeezed lemon juice
- 2 garlic cloves (minced)
- 2 tsp. Dijon mustard
- 1 tsp. salt
- 1/2 tsp. black pepper
- 12 lamb rib chops (about 1 inch thick and 2 to 2 1/2 lb. total, with bones frenched; also called lamb lollipops)
Directions
- In a small bowl, whisk together 1/4 cup olive oil, the oregano, lemon zest, lemon juice, garlic, mustard, salt, and pepper until blended. Set out lamb chops on a rimmed pan and smear them all over with the marinade. Let stand at room temperature 40-60 minutes.
- Heat a large frying pan over medium heat until a drop of water flicked onto it evaporates immediately. Add the remaining 1 Tbsp. olive oil and tilt pan to coat. Set 6 lamb chops in a single layer in the frying pan and cover pan with a splatter guard if you have one. Cook chops, turning once, until nicely browned and cooked to the doneness you prefer, 4-6 minutes total for medium-rare (125°F in the thickest part when tested with an instant-read thermometer).
- Transfer chops to a platter and tent loosely with foil. Repeat to cook the remaining lamb chops. Tuck fresh oregano sprigs around the chops if you like.
