- 1 Tbsp. oil (high-heat oil like avocado or grapeseed oil)
- 1/2 lb. chicken breast tenders (cut in bite-sized pieces)
- 2 cups broccoli florets (trimmed)
- 4 baby bok choy (sliced in half or quarters, lengthwise)
- 1/2 medium red bell pepper (sliced)
- 1/4 white onion (sliced)
- 1 clove garlic (minced)
- 1/4 cup cashews
- 2 tsp. sesame seeds
- 1 green onion (thinly sliced)
- 1/4 cup coconut sugar (or brown sugar)
- 2 Tbsp. mirin (a slightly sweet rice wine substitute sake, marsala or sweet white wine if you can't find it)
- 1/4 cup gluten-free tamari (or soy sauce, or coconut aminos for paleo diet)
- 2 Tbsp. rice wine vinegar
- 1 tsp. cornstarch (or arrowroot or potato starch mixed with 3, teaspoon water)
