This Impossible™ meatball recipe is perfect for making spaghetti and Italian meatballs for the house. the meatballs are quick and easy-to-make, rich and meaty in flavor…and made from plants. This recipe calls for a can of San Marzano tomatoes, a variety of the roma tomato that’s far sweeter, more flavorful and less acidic than your average tomato. Be sure to check the label on the can of tomatoes you buy to make sure you’re getting San Marzanos. Pro tip from our culinary team about bread crumbs: save your leftover slices of bread and let them dry out in a paper bag in your cupboard. Then when you need bread crumbs, just take a few slices out and run them through your food processor or blender. Ingredients
- 12 oz. Impossible™ Burger
- 1/2 cup onion (diced)
- 3 cloves garlic (minced)
- 2 Tbsp. extra virgin olive oil
- 28 oz. San Marzano Diced Tomatoes (canned)
- 1 Tbsp. fresh thyme (picked & chopped)
- 1 Tbsp. fresh oregano (picked & chopped)
- 1 Tbsp. fresh basil (picked & chopped)
- salt (to taste)
- pepper (to taste)
- 1/2 tsp. onion powder
- 2 tsp. garlic powder
- 1/2 tsp. dried basil
- 1/2 tsp. dried oregano
- 1/2 tsp. ground fennel seed
- 1/2 tsp. crushed red pepper
- 1 tsp. salt
- 1/2 tsp. black pepper
- 1 cup shaved Parmesan cheese
- 2 Tbsp. balsamic glaze
- 2 Tbsp. parsley (chopped)
Directions
- Cook the onions & garlic: Sweat onions and garlic with extra virgin olive oil until soft. Preheat the oven to 425° F.
- Add tomatoes: Add tomatoes and bring to a boil, then low simmer for approximately 30 min.
- Toss in the herbs: Add fresh herbs for 1 minute, then season to taste. If time is limited you can use your favorite store bought marinara.
