- 3 cups low sodium chicken stock
- 4 tomatoes (vine ripe, diced)
- 2 Anaheim chile peppers (or 2 sweet red or yellow peppers, optional, seeds removed and sliced)
- 1 cup sour cream
- 1 1/2 lb. pasta (prepare according to package instructions, use wide egg noodles or corkscrew)
