- salt (taste I use about ¼ teaspoon)
- 1 1/2 cups pinto beans (cooked, drained, if using canned)
- 1/4 cup water
- 1 tsp. lime juice
- 1 Tbsp. hot sauce (if desired – chipotle in adobo is a great option as well)
- 4 corn tortillas (6-inch)
- 4 large eggs
- 2 Tbsp. olive oil

- pepper
- 1 cup sauce (Ranchero, or use warmed salsa or your favorite hot sauce)
