- 1/2 cup vegetable oil
- 1 1/2 tsp. gluten free vanilla extract (I use Rodelle)
- 3/4 cup boiling water (for activating the cocoa)
- 1/2 cup butter (or dairy-free butter)
- 1 1/2 tsp. gluten free vanilla extract
- 1/2 cup unsweetened cocoa powder
- 4 1/2 cups powdered sugar
- 1/4 cup milk (or dairy-free milk)

Texture was crumbly.. had to add milk and oil.. it took sometime to bake but turned out to be moist &delicious!

What a gorgeous, moist light YUM chocolate cake! I substituted melted 100% organic chocolate out of curiosity (1 oz per 3Tb cocoa), and let the batter sit in the pans for about 10 mins before baking as some GF recipes suggest. Ooh what a great birthday cake for a chocolate lover like me. Thanks!
