- 1 tsp. baking soda
- 1 1/2 cups gluten free flour (I like Pillsbury gluten-free flour)
- 1/4 tsp. xanthan gum (leave out if your flour already has it in it)
- 1 pinch salt
- 1/2 cup sugar (or 1/2 cup of pure maple syrup for no refined sugar option)
- 1/2 tsp. canela
- 1 tsp. lemon peel (optional)
- 2 large eggs (beaten)
- 1 tsp. pure vanilla extract
- 1 cup frozen blueberries (or fresh, add as much or as little as you like)
