Description
Eggs fluffed up with Hellmann's mayonnaise, poured over salmon and chives
Ingredients

- 30 grams smoked salmon (slices)
- 1 1/2 Hellmann's Real Mayonnaise (dollop*)
- chives
- 2 eggs
- pepper
- 1 lemon
- 1 Tbsp. olive oil

Directions
- Mix the smoked salmon strips with a generous dollop* of mayonnaise, add a sprinkle of chopped chives and season well with pepper.
- In a separate bowl whisk together two eggs and add a little pepper.
- Heat the olive oil in a frying pan and add the eggs. When the omelette is nearly set spread the salmon mix over it and fold in half.
- Allow to cook for another couple of minutes so it's nicely warmed up, then eat immediately.
- Serve with a wedge of lemon.
