- 32 oz. fire roasted tomatoes (undrained)
- 16 oz. vegetable broth (carton, see note below)
- 1 onion (large, chopped)
- 1 red bell pepper (diced)
- 1 leek (green top removed, sliced)
- 2 cloves garlic (minced)
- 2 celery (ribs, diced)
- 2 carrots (peeled and sliced)
- 1 tsp. dried basil
- 1 tsp. dried oregano
- 1 tsp. dried thyme
- 1 Tbsp. dried parsley
- 1 tsp. sea salt
- 1/2 tsp. ground black pepper (I actually used one teaspoon)
