- 1 onion (sliced)
- 3 cloves garlic (grated or crushed)
- 2 cms ginger (grated)
- 1 tsp. chilli flakes
- 3 tsp. Garam Masala
- 2 tsp. turmeric
- 4 skinless, boneless chicken thighs (diced, roughly 500g / 1lb total weight)
- 100 grams red lentils
- 400 mL light coconut milk (you can, of course, use full fat coconut milk if you prefer)
- 1 red pepper (diced)
- 1 green pepper (diced)
- salt
- pepper
- 1 lime (optional)
- 15 grams fresh coriander (cilantro roughly chopped, plus extra for garnish)
