- 1/2 onion (Medium, finely chopped)
- 2 cloves garlic (finely chopped)
- 1/2 cup celery (diced)
- 2 medium carrots (sliced)
- 4 cups chicken broth
- 1 can diced green chiles
- 1 Tbsp. chili powder
- 1 Tbsp. cilantro (dried, or you can top with minced fresh cilantro just before serving)
- 1 tsp. cumin (each, oregano, kosher salt and pepper)
- 3 cooked chicken breasts (shredded)
- 15 oz. black beans (rinsed and drained)
- 6 corn tortillas (cut into 1/4 inch strips)
- 1/2 cup vegetable oil (for frying tortilla strips)
- shredded cheddar (to top before serving)
