Description
Got a rotisserie chicken, or some leftover cooked chicken? Just add your favorite salsa (mild to blazing hot), a few simple seasonings, and some melty cheese, and you’ve got this family-friendly recipe. The tacos taste great in crispy store-bought shells, but you can go with warm corn tortillas as well. The recipe, which makes 12 tacos, is a Yummly original created by Ericka Sanchez.

- 1 cup shredded lettuce (or 2 cups if you’d like more)
- 2 jalapeño chilies (optional)
- 1 large avocado
- 1/2 cup white onion (chopped)
- 3/4 cup red bell pepper (chopped)
- 2 3/4 cups cooked chicken breast (such as rotisserie chicken)
- 1 Tbsp. vegetable oil
- 1 cup salsa (red, hot or mild, such as Herdez brand)
- 1 tsp. dried oregano (preferably Mexican, crushed)
- 1/2 tsp. garlic salt
- 1/2 tsp. black pepper
- 1/4 tsp. ground cumin
- 3/4 cup shredded Mexican cheese blend
- 12 taco shells

Directions
- Preheat oven to 325°F. Prepare ingredients if you haven’t already: Cut lettuce into shreds and slice jalapeños into thin rings. Pit and peel avocado and mash with a fork in a small bowl. Set toppings aside. Chop onion and bell pepper. Tear chicken into shreds.
- Heat oil in a large frying pan over medium-low heat. Add onion and bell pepper. Cook, stirring often, until vegetables are softened, about 3 minutes. Stir in chicken and salsa. Season with oregano, garlic salt, pepper, and cumin. Cook stirring frequently, until excess liquid has evaporated, the chicken has a light, even coating of sauce, and the flavors are blended, 8-9 minutes. The chicken should still be tender and juicy.
- While the chicken cooks, place taco shells on a sheet pan. Bake until crisp, about 7 minutes.
- Turn off heat under chicken mixture and sprinkle it with cheese. Let stand a few minutes for cheese to melt.
- Spoon about 1/4 cup chicken mixture into each taco shell. Top with reserved lettuce, a spoonful of avocado, and jalapeño slices, if you like. Serve immediately, as the taco shells will soften with standing.
