- 1 lb. chicken liver (trimmed, preferably from chickens raised on pasture)
- 10 egg yolks
- 2 cups cream (preferably from cows raised on pasture)
- 1/2 cup arrowroot
- 2 1/4 tsp. salt
- 1 tsp. black pepper
- 2 Tbsp. fresh thyme
- 1/2 tsp. grated nutmeg (freshly)
- 1/2 tsp. ground allspice
- 10 Tbsp. unsalted butter (or ghee)
- sage leaves (or Several fresh bay, optional)
