- 3/4 cup coconut milk
- 1 Tbsp. maple syrup
- 1 dash vanilla extract
- 1/4 cup chia seeds
- 4 strawberries (diced)
- 1/2 mango (diced)
- sliced almonds (optional)
- coconut flakes (optional)
- chocolate chips (optional)

Directions
- In a bowl, mix coconut milk, maple syrup and vanilla extract. Whisk until combined.
- Add chia seeds to coconut milk mixture. Stir to make sure all the chia seeds are mixed in.
- Cover and store in the refrigerator overnight.
- Serve in a small bowl and garnish with any combination of toppings. Enjoy!
