The whole family will love these impossibly easy, cheesy enchiladas. Make them on weeknights when you need a low-fuss dinner that's simple and delicious. The recipe is a Yummly original created by Sara Mellas.

- 2 cans red enchilada sauce (10 oz. per can)
- 3 cups shredded Mexican cheese (for enchiladas)
- 1/3 cup sour cream
- 1 can Hatch mild diced green chiles (4 oz. per can)
- 1 tsp. ground cumin
- 12 soft corn tortillas (6-inch diameter)
- 1 cup shredded Mexican cheese (for topping)
- finely chopped cilantro (optional, for garnish)
- avocado (chopped; optional, for garnish)

Directions
- Preheat the oven to 350°F.
- Spoon about 1/2 cup of enchilada sauce into a 9x13-inch baking dish and spread it evenly across the bottom. Set aside.
- Place the shredded cheese, sour cream, green chilies, and cumin in a large mixing bowl and stir together with a rubber spatula until combined.

delicious! So easy and it was a hit with my neighbors. I did add about a tsp of cumin as well as topping with avocado and cabbage.

family loved it! I added some grilled chicken breast that I had in the fridge. i only had flour tortillas on hand, which got a bit glue-y. I'll definetely use corn next time.

This was pretty good. I have a chicken recipe that has a cheese cream sauce so my family was uncertain, LOL. I did swap out the corn tortillas for flour. I do think I may add some kind of meet next time to make it a little more filing for the big eaters in my family.

The easiest enchiladas ever! No frying tortillas before making, so much less mess. Will definitely make these again.

My fiance is the one who usually makes this, hes an awesome cook but, i wanted to try. So, heres how it turned out.. I'm now in charge of making them lol! He loved them i didnt realize it was a cheese enchilada recipe at first and so there was shredded chicken added to the mix. I also made the sauce from scratch using a recipe from this app.
