Delicious! Fast and easy recipe, perfect for weeknight dinners, very flavorful. I served as a side with pan fried cod. I used a can of fire roasted corn and added a couple squeezes of lemon just before serving. Great on its own, would also be yummy with cornbread or rice. Will definitely be making again.
