The whole family loved this easy “do the night before” breakfast dish. I mixed the cheese and ham with the hash browns rather than layering. Definitely pre-bake the hash browns so they are a bit crispy. Will make again.

I changed it up some because of allergies and based on what I had. I used frozen potatoes O'brian, added some onion and fried it in a cast Iron pan on the stove. I added 1.5 cups goat cheddar cheese and chopped deli ham on top. Mixed in canned coconut milk with the eggs. Baked in same caste iron skillet used for potatoes. It was absolutely delicious! It reminded me of a quiche.
