  • 2 tablespoons canola oil
  • 1 pound shrimp (medium-large fresh, cleaned, approximately 15-20 count shrimp)
  • 1 cup frozen peas (and diced carrots blend, I don’t thaw and use straight from the freezer)
  • 1/2 cup corn (I use frozen straight from the freezer)
  • 3 garlic cloves (finely minced or pressed)
  • 1/2 teaspoon ground ginger
  • 3 large eggs (lightly beaten)
  • 4 cups cooked rice ( , I use white, long-grain or brown may be substituted. To save time use two 8.8-ounce pouches cooked and ready-to-serve rice)
  • 3 green onions (trimmed and sliced into thin rounds)
  • 4 tablespoons low sodium soy sauce
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon freshly ground black pepper (or to taste)

    Followed instructions and rice did not come out fried whatsoever. Ended up adding 2 Tbsp of Oil and that did help either. Tasted good, just wasnt fried rice.

    While the recipe was great, it was lacking in flavor. I added fish sauce and scale back to 1 tbsp of sesame oil because it was a bit overpowering.

    Overall it’s a good recipe. I used brown rice and mixed canola and olive oil. I would have used slightly less oil if I made it again. Also, I would have preferred some red pepper flakes for spice. Definitely season your shrimp (even if only with salt and pepper). I also ended up using half low sodium soy sauce and half regular because of availability. Regular soy sauce helps with the flavor if you aren’t concerned with the high sodium.

    It was delicious! I had to tweak a few of the directions because I had no frozen vegetables and I only cooked the shrimp for one minute on each side ( they were perfectly done when I added them to the dish) It was a great recipe and I will be using again and playing with chicken, pork or beef when I do.
