- 2 cups dry red wine (like pinot noir or chianti)
- 1 cup beef stock
- 2 bay leaves (dried or fresh)
- 1/2 tsp. xanthan gum (optional)
- 250 grams white button mushrooms (cut in halves or quarters if large)

- freshly ground black pepper
- olive oil (for frying)
- 1 Tbsp. unsalted butter (for frying mushrooms)
- fresh parsley (for garnishing, chopped, optional)
