I took this and added Kidney, Great Northern,Black Beans, Red Onion, Red Pepper, Black Olives and Cilantro. I triped the amount of the dressing ingredients and it turned out to be the best bean salad I ever had!!

Yummy! Used it as a main course for lunch…which made it more like 2 generous servings. I like that the recipe forms a base - beans & dressing. From there you can go towards Greek salad flavours (basil, oregano). It will be fun to experiment. I also used red balsamic vinegar in the dressing as no lemons in the house. Still yummy!

It's great for most people but I like my bean salad more tart so I added a tbsp of acv.

Dressing was a bit bland so added a bit of sugar and lime which livened it up a bit.

Solid bean salad. It went very well with chilli dogs. Very quick and easy to put together and then just chill in the fridge. I will make it again
