- 6 oz. mushrooms (shiitakes are delicious but use what you can find or a combination)
- 6 green onions (thinly sliced)
- 1 Tbsp. fresh ginger (peeled and grated)
- 1/2 cup sliced carrots
- 3 whole star anise (pieces, or about 2 tsp. broken star anise pieces)
- 1/2 Tbsp. coconut oil
- 1 1/2 Tbsp. tamari
- 1 tsp. sesame oil
- 4 oz. bean sprouts
- 1 lime (cut into wedges)
- 1 bunch fresh cilantro (basil and mint)
- 1 pinch red pepper flakes (optional!)

INCREDIBLE! like seriously my favorite recipe on this app (and I've had it for 2 years and am not vegan). I used shitake and enoki mushrooms, also added sriracha, garlic, lime zest/juice, and whole cinnamon/cloves. I used udon noodles, but imagine rice noodles are just as good. 10/10 recommend!!!

Super Delicious! I couldn't find any of the Tamari but I switched it for a little Teriyaki in with the mushrooms and sesame oil. So much flavour and everything is soft and delicious! <3

Vegan Pho turned out great! Made it a second time and added thinly sliced Pork, just as good either way!

It was so great! Fresh and tasty. Easy to prepare. I love pho, and this is a quick one to prepare. An easy weeknight dinner.
