I almost always sauté any vegetables before adding stock. So I sautéed some garlic, with carrots and had to sub in brussel sprouts because I did not have cabbage. I sautéed my dumplings in sesame oil. Pretty good with my mods overall.

My go to dumpling broth! I use shiitake mushroom dumplings. I definitely recommend using low sodium soy sauce, I find it salty enough, and you can always add salt to suit your taste. I also used pak choy instead of cabbage
