- 2 1/2 tsp. dry active yeast (or 1 packet)
- 3/4 cup tap water (around 105-115˚F)
- 2 cups all purpose flour
- 1 1/2 Tbsp. sugar
- 1 1/2 tsp. salt
- 3 Tbsp. olive oil (divided)
- 8 oz. fresh mozzarella cheese (shredded)
- 2 tomatoes (medium-sized)
- 1 Tbsp. italian seasoning (or to taste)
- basil (Chopped, for garnish, optional)
- 3 tsp. olive oil
- 1 cup chicken (Indonesian barbecue)
- 8 oz. shredded gouda cheese
- 1 yellow bell pepper (medium-sized, thinly sliced)
- 1 red onion (medium-sized, thinly sliced)
- chopped cilantro (for garnish, optional)

Directions
- Preheat the KitchenAid® Convection Digital Countertop Oven to 400˚F. Add 2 tablespoons of the olive oil to your nonstick multipurpose pan. Set aside.
- Fill a small bowl with warm tap water. Let sit for 2-3 minutes to warm up the bowl, then discard water. Add 3/4 hot tap water (around 105-115˚F), sugar and yeast to the small sized bowl. Stir until the yeast is mostly dissolved (it’s okay if mixture is a little lumpy). Allow to sit for 5 minutes, until mixture starts to bubble and foam (the bubbling and foaming means the yeast has been activated).
- While the yeast is activating, combine the flour and salt in a medium sized ceramic bowl from your KitchenAid® Ceramic 3-Piece Nesting Mixing Bowl Set. Once the yeast is activated, add it to the flour mixture along with 1 tablespoon of olive oil. Use a wooden spoon or sturdy spatula to stir until all flour is incorporated.
