- 6 Tbsp. grass-fed butter (cold, organic, unsalted, cut into cubes)
- 6 Tbsp. olive oil (chilled in freezer up to an hour)
- 3 Tbsp. maple syrup (organic, depending on how sweet you want your crust)
- 4 Tbsp. ice water
- 1 salt (finger-pinch of)
- 1 apple (medium sweet, fuji, ambrosia, gala, honeycrisp, braeburn)
- 1 pear (medium sweet, not overly ripe, d'angou, bosch, comice, seckel, starkrimson- bartlett can be too mushy)
- 1/2 tsp. ginger (dried)
- 1 tsp. tapioca flour
- 6 pitted dates (large, I used medjool)
- 4 Tbsp. coconut milk (full fat canned/boxed)
- 1 tsp. vanilla extract
- 1 Tbsp. coconut oil
- 1 salt (finger-pinch of)
- warm water (as needed for consistency)
