- 1 Vidalia onion (medium sweet, peeled and diced small)
- 3 garlic cloves (pressed or finely minced)
- 8 cups reduced sodium vegetable broth
- 12 oz. fresh mushrooms (trimmed and thinly sliced, I used 4 ounces shitake and 8 ounces baby portobello)
- 2 cups broccoli florets
- 1 zucchini (medium/large, diced into bite-sized pieces)
- 1/4 cup reduced sodium soy sauce
- 1 tsp. dried thyme
- 1 tsp. dried oregano
- 1 tsp. kosher salt (or to taste)
- 1 tsp. freshly ground black pepper (or to taste)
- 3 bay leaves
- 1 Tbsp. rice wine vinegar ( optional, brightens up the flavor)
- 1 Tbsp. apple cider vinegar (optional, brightens up the flavor)
- 1 tsp. granulated sugar (optional and to taste, balances the acidity from the vinegars)

Great I used Italian season to sub for the thyme and oregano. I also 32 oz vegetable stock 32 oz water since I could not find any low sodium broth. I also use the optional sugar and apple vinegar it really gave the soup depth!

This was fantastic! I added liquid aminos instead of soy sauce and cut the salt to 1/2 tsp. I love vinegar so I added a lot. It is so delicious!

Delicious! I replaced the broccoli with Romanesco cabbage florets and it turned out great. Easy to adapt, will definitely try this again!

Made this tonight with a few minor changes. Had no zucchini so used extra broccoli. Used mushroom broth instead of vegetable broth and simmered it for an hour. Super flavourful broth ( definitely use the vinegars and sugar) - hubby and I really enjoyed it! Would be good with some noodles too - ignite try that next time. A keeper👍🏻
