    The cookie dough recipe was perfection. The only change I made was adding 1/2 tsp. of Penzey's Cake Spice blend, just because I love a little spice in my cookies. It took me three tries to get the cookie size right. Finally decided that the right size for my preference is using a mini muffin-tin and about a 1.5" ball of dough. I don't have a tart press but after trying a few different things, I ended up using my fingers to press the dough into the tin - the key is to press it enough that the dough comes up the sides a little because the dough will expand while it cooks and you want to have enough room to add the icing and "eggs" inside the nest. A single recipe made enough to give a 2 dozen away and still have enough for our Easter dinner.
